Abstract:

The goal of this experimental project is to produce wine following the techniques and methods mentioned in the classical Latin works in order to validate the hypotheses laid out. First, as said, a group of classical authors has been selected to study them and get information about the roman wine production. Also, many archaeological research works have been consulted. Using those data, a time schedule of the experimentation was made. The following part consisted on conducting the experiment with the maximum accuracy. It started with the grape harvest and ended with de wine fermentation. Thus, the results obtained, although partial, have allowed us to validate the hypotheses and propose an explanation to certain practices related to wine making and reflected in textual sources.
